Traeger built its reputation on pellet grills and smokers. The Irontop is a different direction entirely. A flat top griddle built to handle everything from breakfast pancakes to seared steaks, positioned as a direct competitor to Blackstone at what Traeger claims is a better performance standard.
The headline claim is even heat distribution. Traeger says the Irontop delivers more consistent edge to edge temperature coverage than Blackstone Omnivore griddles, based on head to head testing they conducted in March 2026 measuring temperature variation across the cooking surface at ten minutes on high heat. Whether that difference shows up in everyday cooking is hard to say without independent testing, but the engineering behind it is solid. Two burners on the 2 burner model provide full coverage across 504 square inches of cooking area. Built in 360 degree wind guards keep heat locked in outdoors where wind typically kills griddle performance.
The cooking surface gets a rust resistant, food safe coating that is heat treated during manufacturing for durability. With proper care it delivers non stick properties without the concerns that come with traditional non stick coatings breaking down at high temperatures. A single grease catch bucket handles cleanup.
